This cheese, invented in the 1970's by a creamery in Seine-et-Marne, has an affinage of three weeks. Its name translates as gratte (scratch) and paille (straw). It is a soft-white cheese of brick shape with a natural white rind. Nearly twice as thick as Camembert (and enriched with cream) this cheese ripens much longer, resulting in an oily texture and grainy/chalky center. Gratte-Paille is a rich, creamy tasting cheese with a mushroom flavor that sharpens with age. The rind may also become dry and reddish as it matures. This kind of cheese is used for cooking, for baking in pastries with chicken and vegetables. Similar cheeses include Brillat-Savarin and Pierre Robert.
