La Peral Blue is a lightly blued, rare and delicious mixed milk cheese. La Peral is made from pasteurized cow's milk combined with sheep's cream aged for sixty days in the natural prehistoric caves that dot the landscape of Asturias. It is smoothly piquant with a strong olive flavor and a pungent aroma. Slightly crumbly, its texture becomes creamier at the finish.

Every thing a Blue cheese should be and nothing it. Not too strong. I would give it 6 stars if I could.shouldn't
