Cured Iberico Pork Loin
Pure Breed Ibérico meats under the Dehesa Cordobesa™ label. The purebred pigs are all born and raised by
farmers within COVAP’s cooperative.
While by law only 50-75% of the pig
must be Ibérico breed to use “Ibérico” in the name and while most producers raise pigs or cure the
meats using pigs which are mixed breed, COVAP raises only 100% pure bred Ibérico pigs.
COVAP has 400,000 hectares of Dehesa (acorn tree forest) in the Valley of the Pedroches in the province of Cordoba, Spain. The Dehesa covers the wooded pastures where Holm
oaks grow and in this unique environment, Ibérico pigs
are born and raised, roaming the land freely.
The acorn trees which grow here are the Encina (Holm Oak), not the Alcornoque.
The Encina is considered to have the sweetest acorns in Spain. Ibérico pigs feed on cereal
in summer and grass and acorns in the fall and winter.
This natural feeding as well as the
animal roaming free, contribute to the marbling of the meat when it is
processed and all of these characteristics contribute to its exceptional
