Robiola di Bosco

Robiola di Bosco, this particular Robiola is quite similar to Taleggio it is a washed rind pasteurized cow's milk cheese.  The presence of mold on the rind is a sign of a healthy cheese, creamy inside but full flavored.  Great with pears and grapes served with a crisp white wine.
