Exclusively made in an artisanal way in the Roncal valley (Navarra) with sheep milk from ""Rasa"" and ""Latxa"" flocks. Its coagulation is enzymatic and the paste is uncooked and pressed and the cheese is left to mature fully. Natural and smooth rind. It has a strong and slightly pignant flavour, very defined and buttery. Firm texture, aged 6 months. This was Spain's first cheese to obtain D.O status.
