Olive Oils we have tasted to date! Smooth, fruity, elegant, a
must have for anyone who considers themselves an oil connoisseur.
The Madeira family has owned land in the Douro region dating
back to the 17th century. They have over 200 hectares of olive
groves
and 60 hectares of vineyards where they produce world class
wines and olive oils. The soil is poor and rocky on steep
slopes and
temperatures soar high with little rainfall. Only vines, almonds
and olives adapt naturally to this climate.
We are proud to introduce Carm Grande Escolha , produced
from olives hand picked between the end of October and
the beginning
of December,
when the color changes from green to black. The olives are
quickly processed without delay, pulverized in a traditional
stone mill
without the addition of any water, which may diminish their
aromatic quality. The key to the greatness of this oil is
in the pressing – gentle,
at ambient temperatures, so as to produce a soft oil without
any loss of aroma or harsh bitterness. Extraction is done
using the
most modern cold extraction technology, one unheard of in
Portugal. The oil is bottled after a natural decanting,
without filtering.

The almond used is the Largueta, another variety indigenous
to Spain. It is longer and flatter
than a California almond and the piedras, which means rocks in Spanish, are

To celebrate their 25th anniversary, Les Trois Petis Cochons created
this sublime bloc. Made with pure Foie Gras -- a highly prized
delicacy of the Southwest region of France -- Sauternes, Cognac
and spices. Silky and sweet... Their chefs recommend serving a
thin cold slice of bloc on a toasted brioche bread. A glass of
Champagne, Sauternes or Port white wine will enhance the delicacy
of the Foie Gras.
